Any Italian cooks out there ?


I am looking for an eggplant recipe but don’t know what it was called, I had this many years ago and remember how good it was

Let me describe it

It was fried in oil you took 2 slices of eggplant and put it on the out side of this paddy that was made of Beard crumbs parmesan cheese and some other ingredients , I didn’t make it , it was served to me by an Italian lady many years ago . It was good hot or cold I remember having it cold the next day
Does this ring a bell with any one?

I would really like to make it myself but can’t find a recipe for it any where.

Okay, wait-- it was eggplant placed around a patty of something? Like the slices were bread in a sandwich or something? Was there any meat in the mixture? Was it served with any kind of sauce? I'm racking my brain here and the only thing I can think of is eggplant rolls. Not quite what you're describing, though.

Yes The Eggplant was sliced in 1/4 in rings and the breading mixture went between the 2 slices of eggplant then it was fried

sounds like eggplant eggplant parmesan. as for the Beard crumbs you mentioned, they are best obtained from bikers and lumberjacks right after they eat.

Sounds like the beginning of eggplant parmiagiana. You make the eggplant like you mentioned: fried chicken style, and then add the mozzarella and sauce. It's just fried eggplant that is also great as a "sangwich".
