I'm on a Japanese kick.
Lately I've been doing a lot of simple Japanese food for lunch.
My favorites: Cold soba noodles w/ soy sauce and sesame oil, toasted sesame seeds, nori flakes, and sliced scallions. Absolutely delicious for a hot day. Takes about 10 minutes including boiling the water. I cook and strain the noodles and then dunk them in iced water to get them cold. Strain again and into the bowl, dump a good amount of all ingredients and mix well. Finally smash the nori in your hands and then sprinkle on top. I also do a cold cucumber salad with the same ingredients and it tastes great if you're not into noodles. Chicken curry over rice - I know it's cheating but I bought these curry bricks (they look like chocolate bars) from my local Japanese market. They're called "Golden Curry" and I just followed the directions on the box, which go something like this: Cube up some chicken or beef Sautee for a few minutes in veggie oil Add mixed veggies (I just use frozen peas/carrots/beans mix) Sautee for a couple minutes Cover with water, bring to boil, then immediately: Lower heat and simmer for 5 mins until meat is tender Dump a couple of curry cubes in Mix and keep stirring, cook until it's thick and reduced a little. Pour it over some brown rice Slice up some scallions and cilantro and sprinkle over top
