Captain Morgan's Flank Steak
A Memorial Day treat that's sure to please...
2 flank steaks - 2 pounds each the rub... 1 t salt 1 T pepper 1/4 t ground cinnamon 1/4 t allspice 1 T sugar 1 t chili powder 1/4 t ground cumin 1 t dried thyme the glaze... 1 1/2 c Captain Morgan's or any dark rum 1/2 c brown sugar 1/2 c molasses 1/2 c red wine vinegar 1 small cinnamon stick 1 T sambal olek - sambal oelek is made of chilies with no other additives such as garlic or spices found in Asian markets - you might find it in the specialty section at your store 1 T dijon mustard 1 T sweet soy sauce 1/4 c fresh ginger grated mix all the ingredients for the rub and rub the steaks all over - wrap tightly in plastic wrap and into the fridge for 2 days get the grill going mix all the ingredients for the glaze in a pot and cook over low to medium heat and reduce it to 2/3 so it's nice and syrupy - maybe 25 minutes grill the steaks over high to medium rare - no more - maybe 3 - 4 minutes per side dredge the steaks in the glaze and let them rest maybe 5 minutes - then back on the hotest part of the grill for 30 - 45 seconds per side slice the steaks THIN across the grain at an angle you can serve this with any left over glaze potato salad, green bean salad and corn on the cob with garlic butter and grated parmesan cheese this will feed 5-6 SUMMER IS HERE - MANJA!!! I don't really like rum but damn that sounds really tasty.. since it's a glaze it also sounds like it'd be good on turkey breasts or chicken on the grill as well...
