Chicken Lettuce Wraps
I still haven't quite perfected that which is served at PF Changs, but this seems pretty darn close... I seem to recall pf changs serving it with cellophane noodles, but i dont like those... they also add bamboo shoots and water chestnuts to the recipe, neither of which i like.. if you like 'em - chop 'em and add them... PF Changs also doesn't use cilantro, I happen to love the smell and taste of it, and had some in the fridge, so I used it. You really could experiment with any kind of vegetable in it, grated carrots would add some color... bean sprouts would add some texture..
(this made one dinner serving plus leftover lunch for today) Chicken Mixture 1/2 lb chicken breasts, ground 1 tsp fresh minced ginger 2 cloves garlic, minced 1/2 package of shitake mushrooms (I used about 6 mushrooms), chopped 2 scallions, minced 1 handful cilantro, chopped Sauce: 1 splash hoisin sauce 1 splash soy sauce 1 splash white wine 2 splashes oyster sauce 2 splashes water 1 small splash sesame oil (for flavor only) 1 splash hot chili sauce (I think this could be optional, i just wanted some heat in it - I used an asian hot chili sauce that was really good) 1 tsp corn starch (Splash is probably about 1 tsp) 4 - 6 lettuce leaves (I used boston lettuce, PF Changs serves it with iceberg, but any lettuce would work) Mix all ingredients for sauce in bowl, and set aside. Add ingredients for chicken mixture to skillet and cook until chicken is cooked all the way thru... (the smell is amazing) Add the sauce to the chicken, and once it heats up, it will thicken a bit. To serve - spoon the chicken into the lettuce leaf and eat like a taco... very tasty... the crisp lettuce with the hot and spicey chicken inside was really good.
