Hankster's Popeye Salmon
4 6 ounce fillets 1 cup honey mustard 1/2 cup UN-seasoned bread crumbs 1 lb baby spinach - cleaned 1 tbsp garlic chopped 1/2 cup olive oil juice of 1 lemon - save the rind salt and pepper pre-heat the oven to 400 F pour the honey mustard over the fillets flip and brush the other side dredge the fillets in the bread crumbs and place on Pammed (greased) baking dish and bake 15 minutes spinach in a large bowl - saute in olive oil the garlic for half a minute or so - pour over the spinach - add the lemon juice - salt and pepper - toss divy up betwenn 4 plates - top with the salmon and grate a little rind on top |
