airplane rules for world travels

Hey! So heres the story: I want to go out of the country(canada to germany for example) and I'd like to know all the rules with the airplane. They changed so much since the last time I checked into it that I really don't know. Gel, drinks, electronics, lighter/match, knife or tools, etc... what can I bring onboard and what cant I bring on board? I heard stories where they don't let you bring a laptop with 2 batteries and things like that. And what about customs: if i have my camera with me and I want to come back with it, do I have to pay? I heard they had some taxes if you didn't declare your stuff. any information on that? I'm in the process of checking all this with air canada but i'm curious as to the slightly more unknown rules.
