So... I watched the video, and perhaps it's because I'm no musical genius, but - I don't fully understand the relavence of those chords at all. Sure, they worked ok w/ the songs, but didn't necessarily sound anything like them?

It's not just the cord, it's how you play it, the timing, the subtle feeling of it, and what you surround it with. No two Baskin Robbins sundaes can be exactly the same.

If you did this for the 12-bar blues progression you could include a lot more than 36 songs.

yeah people have been borrowing riffs and chords forever, Take most green day songs and slow down the riffs and you will note for note find some very familiar songs.
