Hey Cowman-
I pack lunch 3-4 times a week- usually I take a pear or apple, and a granola bar or Luna bar or something like that- easy quick-to-eat good for you stuff. As far as sammies go, I'd try pita bread with deli meats.
Some places here sell individual size tubs of ranch or mayo so you can add that when you're ready to eat whatever sammich you choose (keeps the bread from getting soggy).
Another good-for-you suggestion? Baby carrots, they keep even if they're in a backpack. And a bottled water- stay away from the soda!
