you pretty much answered your own question...
typically people who suffer from allergies inhaling dust, pollen, spores from mold etc. are only affected by direct contact to their nasal passage. drinking wheat grass will strengthen your immune system as you know, building antibodies, working with your system... the same applies with eating local honey produced by the pollen from the very same flowers causing your reaction in the first place.
