A creamy americanized curry that's always a big hit.
Ingredients:
1/2 cup butter
1 lg. onion
2 celery stalks, diced
3 Tbsp curry powder (if your curry powder is like mine and has been sitting around for awhile you may need to increase the amount)
1/2 tsp coriander
3 cups cubed cooked chicken
1 10 and 3/4 ounce can cream of chicken soup
1/2 cup sour cream
1/2 cup whipping cream
Melt the butter - saute the onion and celery until the onion is translucent.
Stir in 1 Tbsp curry powder and the coriander. Cover and cook for 5
minutes. Add the chicken and 1 Tbsp curry powder; cover and cook for 5
minutes. Add the soup, sour cream, whipping cream, and 1 Tbsp curry powder,
cook until bubbling.
Serve over rice.
