For our first anniversary, I gave my wife a 365 page book. On each page I had written something that I loved about her. It took a lot of time. It might be a bit much for valentines day.
I also gave her an envelope filled with coupons for different things. I used a really nice envelope and really nice card stock. Some of the coupons were:
sexual favors
backrubs
footrubs
dinner and a movie
a dinner made by me
completely cleaned house by me
Ironed shirt/skirt by me
etc.
I told her that she could use them at any time no questions asked.
