I could drink a gallon of pesto, I never thought of sauteeing the garlic before, that's a great idea.
I've tried using walnuts instead of pine nuts before, with pretty good results.
I've also considered making "Special Pesto" with weed, but it's a little cost-prohibitive (even moreso than buying pine nuts, damn they're pricey!)
If you add a little red wine vinegar to some pesto, you can make a killer marinade for beef or chicken.
