pesto (and other great italian recipies)
well here's an easy pesto recipie, unfortunately it requires a food processor: (I'd love to share what I consider my masterful art of italian cooking, being Italian and all, just let me know if theres interest)
fresh basil
pine nuts
a few garlic cloves
olive oil
Good Parmigiano cheese (not the kraft shit)
first put the basil in the food processor, then lightly roast the pine nuts and add them, then a healthy amount of cheese. By this time you should be getting a coarse greenish loooking mixture. Here's the cool part, sautee the garlic in the oil and drain the oil into the processor... this gives you the taste of roasted garlic which is great, and you should add some salt. In the end, you get a light green not quite homogenous mixture that should smell great and should taste saltier than you'd like because some of the salt gets absorbed by the pasta. Sorry I don't have specific amounts on how much to put in, you kind of have to get a feel, but if you want try three to five handfulls of basil leaves, one handful of pine nuts, three cloves of garlic and the rest is arbitrary. (by the way, for those lovers of marijuana, chamba and THC, you can add it into the oil and let it simmer with the garlic to make some extra happy pasta) This pesto is great to use in or on anything, but, say, if you put it on a pizza, put it on after its done, you shouldnt cook this cuz it'll start to taste worse and the oil drains out.
