It all depends on what you're being tested for. I only had one partner, too, but I was paranoid and figured I'd rest easier knowing the truth, whatever it was, so I got tested for EVERYTHING. (And they all came back negative - whew!)
For some tests they need blood; for others they basically need a pelvic exam and a culture. They'll need to ask a lot of questions about your sexual history, of course. For AIDS tests, I believe you have to be 6 months out from your last sexual encounter for it to be certain. If you're worried about it showing up on your insurance records, go to Planned Parenthood or a community clinic and pay for it yourself. I think you're doing a good thing, getting tested, for your own peace of mind.
