My most essential application would have to be Proxomitron. Beats the hell out of all those "embedded" Pop-up killers in other web-browsers, but also allows you to cut out adverts, sounds, annoying animated GIFs, blocks well-know banner ad sites etc. Essentially speeds up your browsing a significant amount.
After that...
Opera 7.0 (liked it so much I paid for it)
Notepad (great for drafting up posts, and I use it to take notes during meetings)
Outlook (would be lost without it; absolutely essential for my job)
Cisco VPN client (have to tunnel back into the office somehow)
Cisco Aironet (wireless networking rocks; both for the office and my home wireless network)
Word (use it everyday)
Powerpoint (use it everyday)
Excel (use it everyday)
MS Project (use it every week)
IE (some pages still don't like Opera)
SameTime (IBM/Lotus Instant Messenger app; used in work to talk to my colleagues around the globe in different time-zones)
I like Photoshop 7, but stopped using it as I didn't have a licensed copy. I don't like pirating. So now I use Photoshop Elements, a good entry level app by Adobe I got with my scanner.
