If they could convert a book into a movie without chopping parts out, I'd say George RR Martin's Game of Thrones, or Orson Scott Card's Ender's Game.
edit: actually, don't make Ender's Game into a movie... the book was so good, if they tried making a movie based on it it would only ruin it.

The Wheel of Time movie would be awesome. I heard somewhere a while ago that they were looking at making one.
I'm reading George R. R. Martin's A Clash of Kings right now. That series would make a great set of movies as well.
