Wheel of time would be pretty cool, but you know they'd have to cut out way too much to make it into a movie...
If they could convert a book into a movie without chopping parts out, I'd say George RR Martin's Game of Thrones, or Orson Scott Card's Ender's Game.
edit: actually, don't make Ender's Game into a movie... the book was so good, if they tried making a movie based on it it would only ruin it.
