How could I forget? Jethro Tull - Bouree.; They also do an instrumental version of Coronach live that is awesome (particularly in this, the dotage of Ian Anderson's once mighty voice.)
As for the Guitar Wizards, while I do enjoy Dream Theatre, I don't know any of their instumentals by name.
Steve Vai - Tender Surrender an For the Love of God are particularly good.
Satch - Crush of Love, Train of Angels, and Ice 9 are favorites of mine.
Zappa - G Spot Tornado and The Deathless Horsie, and, or no other reason but the name, Orrin Hatch on Skis.
I like Eric Johnson alright, but the only instrumental of his that I can name is Cliffs of Dover, which is awesome, but which has already been mentioned.
Al Di Meola is arguably jazz, but Race with the Devil on a Turkish Highway is pretty awesome.
