Easy Beef Stroganoff
1 lb round or flank steak
2/3 cup water
1 small can sliced mushrooms
1 envelope onion soup mix
1 cup sour cream
2 tbsp flour
cooked egg noodles
Cut meat into 1/4 - 1/2 inch strips and brown meat quickly in a few tbsp of heated oil. Add the water, mushrooms (including the liquid) and soup mix. Heat just to boiling.
Blend sour cream and flour and add to meat mixture. Cook and stir until mixture thickens.
Serve over hot noodles.
Easy Taco Casserole
1 lb ground beef
1 cup salsa
1/2 cup mayonnaise
2 tsp chili powder
2 cups crushed tortilla chips
1 cup shredded Colby or Monterey Jack cheese
1 cup shredded cheddar cheese
1 tomato, chopped
2 cups shredded lettuce
In a saucepan, brown ground beef and drain off fat. Add salsa, mayo and chili powder; mix well. In an ungreased 2 quart baking dish, layer half the meat mixture, chips and cheeses. Repeat the layers. Bake, uncovered, at 350 degrees for 20 - 25 minutes. Just before serving, top with lettuce and tomatoes.
