Burrito Friday
Prep Time- 30 Minutes Description- quick and tasty
Serves 4
2 med yellow or red pepper
1 med anaheim pepper
2 roma tomatoes, quartered
0.13 or 1/8 med onion
1 15 oz can black or refried beans
1 med avacado
2 T chopped cilantro

Instructions:
Wash peppers. Slice bell pepper into quarters lengthwise. Slice anaheim pepper into halves lengthwise. Separate layers of ion. Place all vegetables, skin side up, on foil 2 inches from broiler element. Cook 7-8 minutes. Remove onions and tomatoes. Continue to cook peppers until skin is burnt. Remove peppers and place in a paper bag for 15 minutes.
While vegies are cooking, slice avacado and heat beans in a small saucepan over medium heat.
Once peppers have cooled, remove skin and slice lengthwise. Place tortillas on a plate and cover with a towel. Heat in microwave. Spoon beans into center of tortilla, top with peppers, onions, tomatoes, avacado, cilantro, salsa, and sour cream.
