Recipe of the Day - October 7 (green bean dish)
Green Beans with Walnuts and Red Onion
Ingredients
1/2 cup walnuts, chopped
1/2 cup red onion, sliced (about 1/2 medium size onion)
1 teaspoon oil
1/2 cup Chicken Broth
1 can Cut Green Beans, drained
1/2 teaspoon salt
2-3 tablespoons Balsamic vinegar (to taste)
Lightly toast walnuts on a cookie sheet in a 300° oven, tossing often, until done. Set walnuts aside.
In a medium skillet, sauté onion slices in oil until thy just start to soften.
Add broth, beans and salt and heat through on medium heat.
Remove from heat, add Balsamic Vinegar, toss, and top with walnuts.
Serve hot or chilled.
