Recipe of the Day - September 20 (baked cheese omelet)
Baked Cheese Omelet
Ingredients
5 large eggs
2 Tbs. half and half
3/4 cup cottage cheese (regular or low fat)
1/2 cup shredded cheddar cheese (regular or reduced fat)
Preparation
Pre-heat oven to 450° and grease an 8-by-8 baking dish with 1-2 tablespoons Butter. Mix eggs, half and half and cottage cheese together thoroughly. Pour mixture into the greased baking pan.
Sprinkle cheddar cheese over the mixture. Cook for about 20 minutes until the top is lightly browned.
Serves 4.
