				Recipe of the Day - September 19 (broccoli couscous soup)
			 
			 
			
		
		
		Broccoli Couscous Soup 
 
Ingredients 
1 large onion, chopped 
2 cloves garlic, minced 
2 Tbs. butter 
1 Tbs. oil 
4 cups broccoli, chopped 
1/2 cup Couscous 
1-1/2 tsp. salt 
1/2 tsp. ground rosemary 
1 Tbs. nutritional yeast 
1 Tbs. lemon juice 
grated Parmesan cheese 
 
Preparation 
In a 3-quart saucepan, sauté onion and garlic in butter and oil until soft.  
 
Add 5 cups water plus broccoli and couscous. Bring to boil, reduce heat and simmer.  
 
Add salt, rosemary, yeast and lemon juice.  
 
Puree in blender or food processor.  
 
Return to stove and simmer for 5 more minutes.  
 
Top with Parmesan.
