SNES - Final Fantasy VI

Sega - NHL(year), Sonic, Mortal Kombat

N64 - Mario Kart
I haven't played much N64

PS - Final Fantasy VII

PS2 - Jury is still out but so far Grand Theft Auto III. I suspect FFX will be on this list too once I play it.

XBox - none. I won't touch the thing.

Gamecube - Super Smash Brothers

PC - WAY too many possibilities. If I had to pick a few, Mafia, Diablo II, Sim City (all of them)

Atari - Pitfall!, Pac-Man

GameBoy - Castlevania
I miss my brother's Atari now
I still think it's the best console ever. Great gameplay beats awesome graphics any day
