Flavored Butters
Rosemary Parmesan Butter
Ingredients
1/2 cup salted butter, room temperature
1 teaspoon minced fresh rosemary
1/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated lemon zest
1/4 cup shredded parmesan
Preparation
Combine all ingredients and blend well.
Allow to stand for at least 30 minutes before using, to allow the flavors to develop.
Store in the refrigerator for up to one week.

Chile Chipotle Butter
Ingredients
1/2 cup salted butter, room temperature
1 1/2 teaspoons finely chopped chipotle chiles in adobo sauce
1/2 teaspoon chili powder
1/2 teaspoon freshly squeezed lime juice
Preparation
Combine all ingredients and blend well.
Allow to stand for at least 30 minutes before using, to allow the flavors to develop.
Store in the refrigerator for up to one week.
Note: Chipotles in adobo are available in small cans or jars in the Hispanic foods section of most grocery stores. A little of this fiery product goes a long way, but leftovers need not be wasted; store them in the refrigerator for one week, or freeze for up to six months.
