The Good Eats recipe for Tofu Chocolate Pie is amazing!
Basically:
Melt a bag of chocolate chips
Put in blender with a block of extra firm tofu and a shot of Kahlua
Blend until liquid
Pour into pie shell and refrigerate
I use unsweetened baker's chocolate + Splenda + butter instead of chips, and pour into a shell made of crushed almonds for a low-carb/sugar-free version.
I've also done it with lime juice and splenda to make a key lime pie. Fantastic!
