It's all in the controller! I started playing VC with an older gamepad which I had beat on pretty bad from many other games. I couldn't finish the first VC flying mission (remote helicopter). So I ordered a new Logitech Rumblepad (wireless), and had no problem with any flying mission from then on. You may want to try calibrating your controller.
