Grilled eggplant:
Rinse and dry an eggplant.
Cut off the cap.
Slice the eggplant lengthwise into 1/4 inch thick slices.
Spray the foreman grill with pam.
Cook eggplant slices 5-7 minutes, flip and cook for 4-7 more.
I use eggplant grilled like this on deli meat sandwiches, in pasta sauce, as a side dish, on pita bread with hummus.
