When I want to get *really* picky...my favorite is two Cortland, one Twenty Ounce, and 3 Macintosh, layered bottom-up in that order, with the cinnamon between the 20O and Mac layers. Oh, and the ice cream can't be anything but Breyers or Byrne Dairy All Natural!
If going with just one, and I have the luxury of choice, it's gotta be Cortlands.
Macoun, Spygold, and Winesap are good too, but I have very little respect for the Granny Smith; imnsho it's the most overrated variety of apple.
