Actually, there really is no huge difference in graphics between the three consoles, except for Xbox having the full-screen anti-aliasing. If you're basing your opinion solely on graphics, get the xbox version.
I personally don't like spawn though, I never liked him, didn't like the comic book, didn't like the HBO series, didn't like the movie, so I have no desire to playing him as a character on soul calibur. On the other hand, I love the Zelda series, so I would probably get the gamecube version. I played the jap version of Soul Calibur 2 on gamecube though, and I didn't like the way Link played a whole lot. I ended up picking other characters instead of Link, but he DOES have the advantage of being really short and a lot of the bigger characters' vertical attacks go right over his head.
It's really a toss-up for me, though. If I'm basing my opinion on graphics, I'd go Xbox. If I'm basing it on the special character, I'd go gamecube. If I'm basing it on controls, I'd go PS2.
