Recipe of the Day - August 4 (scarlet runner salad)
Pretty Scarlet Runner Salad
Ingredients
2 cans Scarlet Runner Beans, rinsed and drained
6 oz feta cheese, crumbled
1 small shallot, minced
1 tablespoon Apple Cider Vinegar
3 tablespoons Walnut Oil
Sea Salt and pepper to taste
1/4 cup fresh parsley, chopped
2 tablespoons walnuts, toasted and chopped
Preparation
Place beans in serving bowl lined with paper towel to absorb any excess liquid.
In a small bowl, mix feta cheese, shallot and vinegar. Let sit for 5 minutes.
Then add salt and pepper to taste. Mix in oil.
Remove paper towel from beans and pour on dressing.
Fold in parsley.
Let stand for 1 hour at room temperature, then refrigerate.
Toss in nuts before serving.
