On the number pad you can use 6 to pull the nose of the plane up and use 9 to point the nose down (works just like trying to pop a wheelie on a motorcyle). The plane flys left and right just like driving a car or bike.
If you do load the game back up I'd recommend starting with the check point that is to the north (directly behind the plane when you first get in). That way the check points all line up in a big circle and you don't waste your fuel. (It took me two tries to get all of the checkpoints....after crashing about 4 times before I got the hang of flying) The mission after the plane flying is awesome so I would really recommend getting past the plane one.

Been doing that too, the plane doesn't go high enough, need a savegame...
