There's East St.Louis and St.Louis proper. East St.L is on the Illinois side of the Mississippi river. St.Louis (main) is on the Missouri side. East St.Louis got a bad rap decades ago when a handful of travelling salesmen got murdered there, and it's reputation has never recovered. Pity, since it's one of the birthplaces of The Blues as a musical genre. Supposedly, there are many good hip-hop clubs there now. But, no one wants to go. It's still 'too dangerous.'
I know a LOT of girls who would be up for pirate night. Most of my female friends were huge swashbuckling fanatics even before the recent movie. (They now talk about how much they want to see J. Depp and O. Bloom get busy together.)
The city museum is in downtown St Louis. (Western side, but near the river.)

Date ideas for more cities:
Chicago: Go see the theatre group "Too Much Light Makes the Baby Go Blind." 30 Plays in 60 Minutes!
New York: See the Big Apple Circus together. If they're on tour: Go to the guggenheim, both of you wearing fake mustaches. Be as pretentious as possible.
L.A.: Sushi dinner at Crazy Tokyo. Or: beachfront strolling on Venice Beach. (I'd say do both, but with the traffic it's a 45 minute drive between the two.)
New Orleans: The cheap, cheezy back of the French Quarter. Haggle over rose colored sunglasses and hot sauce. Follow with peoplewatching at Cafe Du Monde.
SF/Bay Area: Head up to Berkeley on the BART. Do a tour of the sidewalks and compete to see who can find the most amusing freaks. Stop at Crepes A-Go-Go for snacks, or the Cambodiana.
Atlanta: Go to the Buford Farmers Market. Compete by each challenging the other to cook your upcoming dinner with an ingredient that neither of you have ever seen before. Allow each other to research on your home DSL what the hell that veggie you just discovered IS before cooking.
Austin: Yoga and vegan dinner at Casa De Luz (sp.).
Tokyo: Take her to your favorite noodle stand. See who can slurp more loudly.
Kyoto: Be a tourist. See the shrines. There's no way you've seen them all already. Go to the rock gardens. Try and out0zen each other.
Bangkok: Hit the bazaars on the uptown riverside. Buy whatever fruit is in season. Invent a game governing how it must be eaten. (Remember: cook or peel first unless you want to get very very sick.)
Berlin: Find parts of east berlin that haven't been 'modernized' yet. Discover a good hole in the wall that you can pride yourself on having known for years before it was popular, together. OR: Take a walk via the parks. Take the S-Bahn back when you get tired.
