Recipe of the Day - July 26 (carrot salad)
Carrot Salad with Key Lime and Cilantro
Ingredients
4 medium Carrots
1 tablespoon Lime Juice
1/8 teaspoon Limes finely grated zest
2 tablespoons Cilantro Leaves finely chopped
1 teaspoon Vegetable Oil
Salt and Pepper
Garnish
Cilantro sprigs
Preparation
Finely shred carrots in a bowl. Toss together wih remaining ingredients adding slat and pepper to taste.
Serve salad garnished with cilantro.
