How long have you been going out? Is marriage even a possibility at this point in your relationship? If you weren't thinking about marriage before, don't let your mother's opinion ruin your relationship.
If you were thinking about marriage, you should get your mom to give you good reasons not to, "She's Filipina" is just bigoted, and "She's vegetarian" is just so petty and small that it's not even worth thinking about.
It's your life, you're an adult, your Mom's not the one with the girlfriend (I hope), you are, and if Mom won't be happy for you, it's her loss.
