First I'd have them play 'I Shall be Released' by Bob Dylan. Then some somber, but uplifting organ music during the middle part.
At the climax of the funeral, something really powerful and in Latin or French. That sort of churchy music would be real cool.
At the very end, a band would play a really cliche version of "When the Saints go Marching In" with that New Orleans feeling to it. Maybe even that music at the end of all the Warner Bros. cartoons...
