I agree with human. If you want to impress, the thing to do is plan. Think about how you are going to put it all together at the same time. Make a little extra effort on presentation, and look for recipes that require the work well ahead of time, so when your girl arrives, you can give her your attention instead of stressing over the meal.

Here's a thought - you can buy frozen Pepperidge Farm pastry shells that are foolproof. You just put them in the oven and bake and make a creamy chicken or seafood sauce that goes on top. It's easy but different and seems very fancy.
