the big one for me: XP home edition cannot join a domain, and the admin account is a bitch to get to
When you have a small server running win2k server with DHCP and DNS (slight overkill for 2-3 systems, but why not), home ed. is not an option.
but my vote would be win2k professional - unless you are a avid gamer, then you might want to consider dualbooting with win98 for those games that work better there
