Seymour Flux in FFX just becasue I can't beat him yet...
One of the funnest bosses (if you can call them that) was the final battle in Shenmue where you fight 70 guys. It wasn't hard, but felt real good taking out 3-5 guys at once! That one opera singing boss in 'Conker's Revenge' that you had to throw rolls of toliet paper at was pretty fun too.
