Greg700 has two critically important points. One, as ZZ says, every girl is crazy for a sharped dressed man. If you don't have a good suit, rent a tux for the evening. The second, is on a night like this, it usually isn't about fucking. This kind of a night, it's gotta be something out of one of those pulp romance novels. The high points you are looking forward to should be the dinner, the play, dragging the rose over her, etc.
You know her, so use every bit of that knowledge, if she has a favourite flower, make sure some of them are on the bedside table. Or brought up if you order room service for breakfast. Her favourite romantic music? Burn a custom cd and bring a small stereo and put it in the room so all you have to do is press play. (bonus points if you can get it to turn on when you enter the room and thus don't have to take your eyes/concentration off her at all)
The devil's in the details, each thing that is seen to be specifically customized for her and her alone makes it that much better. And yes, it is a lot of work, but it definatly pays off.
