Shin-Akuma from Marvel Vs. Capcom 2. I've been able to beat any computer-controlled opponent before him. Beat him once, but the PS2 memory card has since gotten erased.
The very first time I beat Zeromus from Final Fantasy 2 (or 4 if your anal about nomenclature) I only had Edge standng. I couldn't believe I actually won the fight.
Galamoth from Castlevania : Symphony of the Night, until I found out you can heal lightning damage from him.
And the damn last boss from Rez.
