I play NWN on a server with a persistant world, the designers have built one of the best atmospheres I have ever seen in an online game. Including thier boss type creatures.
The best one I've had the pleasure of killing was one they have dubbed. The Great Wondering One.
In older games, I would have to say Bowser from Mario Brothers. Don't ask why, I just enjoy memories from the way-back-past.
