Recipe of the Day - April 22 (chipotle chicken)
Chipotle Chicken
Ingredients
1- pound skinless boneless chicken breast, washed, cut into 1 inch cubes
1-10 ˝ oz. can cream of mushroom soup
6 oz. chipotle peppers in adobo sauce, julienned
8 oz. sour cream
4 oz. milk
1 small onion, quartered and julienned
8 oz. mushrooms, sliced thin
1 Tbsp. olive oil
4 oz. angel hair pasta, cooked according to package instructions
1/8 tsp. garlic powder
1/8 tsp. ground black pepper
Preparation
Cook angel hair pasta, drain, set aside.
Sauté chicken breast, mushroom pieces, and onion in olive oil.
Combine mushroom soup, chipotle peppers, milk, sour cream, garlic powder, and black pepper in mixing bowl.
Combine all ingredients in 9 x 13 glass covered pan.
Bake at 350 degrees for 40 minutes or until bubbly.
