Here's something very easy to do:
Go get 2 half-pound salmon fillets from the supermarket/fish market. Leave the skin on, drizzle with some olive oil, and sprinkle with lemon pepper. Over medium heat, cook skin-side down in a frying pan for about 4 minutes, then put them into a baking dish and bake at 375 for about 15 more minutes.
While that's going on, boil some plain orange juice in a small pot until it gets thick and syrupy. When the fish is done, drizzle the orange juice syrup over it and enjoy. Goes well with a salad or potatos.
