Personally I work one part of the body per day for an hour...say chest on monday, back on tues, legs on wed and so on. If you don't let you muscles heal completely you'll never be making the gains you want. So through working out a certain group once a week it allows you the time to train that muscle group and let it heal. Don't worry about your muscles weakening over a week - it won't happen unless you not eating.
