Go to dinner. Mom now gets how important you are to her daughter, and she wants to make peace.
Be respectful and honest with her. Tell her how you feel about your girlfriend. If it comes up, go ahead and tell her you haven't had sex with her. Don't expect her to believe that, but don't hestitate to tell her. Most of all, if it starts to turn into an argument (not that it will, but IF it does), keep a cool head, don't get sucked into arguing. Be the bigger person.
