Find some of the same flowers she had in her wedding bouquet, pack them and a picnic basket with good food - good cheese, good bread, good wine, maybe some cold chicken sandwiches, and take her to a pretty spot for a picnic.
That's what I'd enjoy, but the most important thing is for you to pick something you think she'd enjoy - it doesn't have to be expensive. The most important thing is that you put some thought into it.
