I personally think age is a crucial factor in the character and his behaviour
Ive only read the first book so far, but I would bet anything that if Joffrey ordered his"dog" to cut down Sansa he wouldnt do it, and furthermore anyone who got in the way of him not doing it would get fucked up, including the king or any cunt who got in the way. I think the comment about his brother not being a true knight meant something to him, perhaps more than he even gets.
A man who had lived to his 40's as an attack dog and nothing more would do as he was told. A man of say 27... well, he wouldnt be a man to push too far...
