I made some low-carb pancakes this morning. I did fairly rough measurements of everything this time around, but next time I'll try and get it more precise. These are rough estimates of what I used:
2 tablespoons coconut flour
2 tablespoons protein powder (I used unsweetened soy)
2 tablespoons or so of canola oil or melted butter
1/2 tsp baking powder
1/4 tsp salt
1/4 c. egg whites (I was out of whole eggs)
2 tablespoons dairy (heavy cream or half and half; my cream was out so I used 1/2 and 1/2, you could also use whole fat greek yogurt)
enough water to make the batter runny (coconut flour absorbs a LOT of liquid, so it will probably be more than you think)
Next time I would probably use 2 whole eggs, maybe even three. I would also consider throwing in a 1/4 c. of blueberries. With butter and a sprinkling of stevia, they're pretty damn good, especially if your stomach is demanding something bread-like.
