Gloin has a similar build to his son Gimli. If you recall the full body shots of Gimli, he actually wasn't all that rotund after all, though he does have broad shoulders.
Also realize that dwarves such as Fili and Kili are younger, and so they aren't quite as filled out as some of their seniors.
